I decided when my son was four and started asking for cookies at the store that it was time for Late July to make cookies! At home, I love to bake with whole grains, dark chocolate, and Madagascar (Bourbon) vanilla, so I knew I could create cookies for Late July that I would feel good sharing with him.
First a confession, I have a giant sweet tooth and there are two things I absolutely can't resist - cookies and chocolate so creating our new cookies was a dream come true for me. To get the recipes right, I baked different cookies and mixed different fillings for almost my entire pregnancy with my second son Benjamin. I knew I had to finish before he was born, so I used that as my deadline.
My new product development team consists of me and just one other person, Patty so the two of us were very busy mixing and tasting hundreds of cocoa, vanilla and other ingredients before we settled on just a few that were our favorites. Once we narrowed it down, we brought in the rest of the company to try out different batches of cookies. Towards the end, we were doing cookie tastings almost daily. Finally after months of testing, we landed on two recipes that we loved and the rest of the company agreed.
We mixed up so much chocolate and tried so many varieties of vanilla that I thought it might cure me of my sweet tooth. It didn't! I can't resist either of our Vanilla Bean or Dark Chocolate Sandwich cookies. I'd like to credit our brilliant recipes with why I love our cookies so much, but I know the credit should go to our ingredients especially the whole grains, the Madagascar Vanilla and the dark chocolate.
For our organic vanilla bean with green tea cookies we selected an irresistible organic Madagascar Vanilla with the actual bean seeds included because they add so much flavor. Then we add just a hint of sweet green tea which adds a subtle flavor that enhances the vanilla. The result is a filling with a real vanilla flavor and not just a sweet flavor.
For our Organic Dark Chocolate, we actually created our own chocolate blend for the filling using organic non-alkalized cocoa, organic chocolate liquor, organic cocoa butter and a fairly generous amount of organic Madagascar vanilla. The result is quite a bit different than the traditional chocolate filled sandwich cookie because our cookies have a real piece of dark chocolate sandwiched in the middle. These are my son Stephen's favorites!
