My father has always loved the classic combination of peanut butter and rich crackers, but could never understand why the commercial ones had to contain so much junk! He learned the answer the hard way when we spent over a year trying to perfect an organic version. Without the use of hydrogenated oil or high fructose corn syrup to turn the peanut butter into a paste-like filling, it's very hard to get the crackers to stay together. We ended up working with a peanut butter cooperative to develop an organic shelf-stable peanut butter and bought specialized type of equipment to make them. When it was all said and done, we were the first company in the world to create an organic sandwich cracker!

These look great! I recently read a recipe in Bon Appetit that added a huge pat of butter to the inside of a burger! I'm glad to see something that doesn't rely on so much fat for flavor, haha.
