It occurred to me that I'd hit a lunch box rut when I realized I packed almost the same lunch 5 days in a row last week for my sons. I was full of creative ideas back in September, but lately I found myself rushing every morning and my kid's lunches were getting boring! So this weekend I took a few minutes to refresh my lunch-making brain because after all, packing healthy lunches is only good if my sons eat what I pack!
1. Bake something on Sunday to pack during the week! Today I made organic apple crisp with 20 minutes of prep time! I use oats, whole grain pastry flour, butter, brown sugar and evaporated cane juice for the topping and lots of golden delicious apples, lemon juice, cinnamon and a hint of nutmeg for the filling, making this a wholesome and delicious treat (all ingredients organic).
2. Use cookie cutters to make sandwiches into fun shapes. Theme with what's going on at school.
3. Pack a cracker creature. For example, my sons love Cracker Spiders (pictured above)! Spread sunflower nut butter between our classic rich crackers, put pretzel sticks on each side and top with two raisins (use a little more nut butter to make them stick). Variation: Cracker alien, bunny, crab etc.
4. Pack a joke. Dawes Family Favorites: Q. Why did the skeleton cross the road? A. To get to the body shop. Q. What's black and white and red all over? A. An embarrassed zebra.
